Gambling is a skill possessed by the MC, an activity you can pursue at a variety of establishments throughout the game world (low-stakes Poker at Furry's, high-stakes Poker at The Dockgrave, Daiku at Shunsuke's, Hnefatafl at The Alebarrel, whilst Carousing at Divine Juices, and Poker or Juggernaut at your own Tavern if you build one), and also something which might crop up as a way of dealing with certain Quests (e.g. trying to win Adrienne from The Mad Preacher). You can also gamble with Ansel during "Hang Out" events (Interact > Events & Activities > Hang Out Together).
The activity can be a good way of making a lot of money, once you have become good at it (i.e. achieved a high Skill level) - but you might have to lose a lot of money on your way to becoming skilful enough to start making reliable gains.
Gambling is also a way to raise your Gambling skill, sometimes your Willpower, may affect your Influence, or affect the Reputation of your Tavern, or if at another tavern it may increase your reputation there, leading to rumors and opportunities. Note that each gambling activity will have different chances for this, and different caps that skills can be raised to.
